We have nothing but love for the brewery in North County San Diego, but sometimes it's okay to be a bit disappointed and give beer a retaliatory moniker. "Arrogant Sellout" is NOT for everyone! Over the top malt and hops are balanced with a high ABV, so be cautious when consuming! A generous malt bill from Troubadour Maltings, a heavy dose of Chinook and Ahtanum hops, and fermented with SoCal and English Dry yeast strains from Inland Island. Enjoy, you wuss!

The best things come in threes. This Belgian tripel is no exception. Brewed with locally grown Root Shoot pilsner malt, Munich wheat, and honey malts. Accentuated by Colorado Hop Company's Willamette hops, and finished with Inland Island Belgian yeast, this beer will have you flying high. Why "Three Hawks" you ask? I dunno, ask brewer John. He just really digs hawks.

A historical beer brewed around Liege, Belgium, based primarily on Spelt malt. This beer was considered a healthy & esteemed beer. Spelt is considered a heirloom wheat malt, mostly used for breads, but found favor around 1690 for beers around the city of Liege. In addition, unmalted wheat & pilsner malts were used to make this beer. The use of Hallertau Mittlefrüh adds a sweet, earthy & herbal element to the beer.

This tequila oak conditioned version of our Pêche Blanche saison is super refreshing with a light bitterness from Veterans Blend hops. Brewed with Root Shoot's pilsner and white wheat malts, and Inland Island's Baron yeast. White peach purèe from Source of Nature adds just the right amount of delicate sweetness and floral notes.

Once called the "Champagne of the North" by Napoleon's army, this Berliner-style ale originates from Northern Germany and dates back to the 16th century. A delicate aroma, tart palate, and a bit of barnyard funk round out this 100% local ingredient beer named as a tribute to the great city in which we brew!

A Colorado take on a Bavarian classic. Troubadour Malting’s Munich Blue sets the tone like a polka quartet. Traditional German and Czech hops add a spicy characteristic. And Inland Island yeast creates a clean finish. So fill up a Maß and toast your friends to health and happiness! Prost!
Wild, Sour, Fruity
This ale is 100% fermented with Inland Island Brett Brux II. We used local berry honey from St. Michael's Farm in Fort Collins, under-modified pilsner malt from Troubadour in Fort Collins, raw and malted wheat from Root Shoot in Loveland, and Cashmere hops from Colorado Hop Company in Longmont round out this unique brew. Barnyard funk and pineapple aromas with a tart palate evolve with every sip. Swirl in a sensory glass to make this beer shine!

A Colorado Black Lager. Not a Czech Dark lager because we use Cascade hops from Colorado Hop Company. Not a Schwartzbier because we mashed only the finest pale, caramel, and chocolate malts from Troubadour Maltings right here in Fort Collins. The yeast? Lager yeast from Inland Island Yeast Labs in Denver. This creation is all-Colorado and only Colorado. Hints of coffee, chocolate, & caramel dominate the profile, but drinks clean & light like a summer night on the Front Range.

Sometimes our brewers get crazy ideas, like blending two beer styles to create something truly unique. Here we took a classic Belgian Saison and hopped it like a New England style IPA. Root Shoot Pilsner and wheat form the basis of the insanity, and Azacca hops add notes of mango, tropical fruit and citrus to the light esters from the Belgian yeast. Don’t think too much about it or it might drive you mad!
