Summer Ale

Gold medal winner at the 2019 Colorado State Fair.  Light and clean malt presence balanced with moderate hop bitterness and aroma from YHC Pink Boots Hop blend.

The Wedge, West Coast IPA

Named after a popular Newport Beach surf spot that, with the right swell, can produce large wedge shaped waves. This west coast style IPA offers the perfect balance of pine and citrus hop aroma, smooth bitterness, and strong malt backbone. Brewed with award winning Munich 10, and Pale malt from Root Shoot Malting and Cascade, Simcoe, and CO2 hop oil extract from Yakima Chief Hops.


6.9% ABV, 65 IBUs

Serenade Pale Ale

American Pale Ale brewed with pale and crystal malt from Troubadour Maltings in Fort Collins, CO. Balanced with forward bitterness and pine, citrus aroma of Centennial and Ahtanum hops.

Spicoli's Bus, Hazy IPA

Juicy and fruity hop forward ale with slight bitterness.  Citrus orange with a pillowy mouthfeel from Citra and Southern Passion hops and a blend of flaked oats/wheat with Odyssey and Genie malt from Root Shoot Malting in Loveland, CO.


6.8% ABV, 12 IBUs

Todd's Ale, Double IPA

Extremely bitter with an aroma of tropical fruit and and flavors of citrus and pine. Root Shoot Genie Pale and Munich malts provide the backbone to carry 4.5 lbs/bbl of a special hop blend in this strong Hybrid Double IPA.


8.0% ABV, 120 IBUs 

12 oz pour, 22 oz bomber

Chocolate en Fuego

Imperial stout with cacao nibs, cinnamon, and chile de arbol.  Aged in NoCo Distillery rum barrels.  Boozy, chocolate, and sweet with a spicy finish.


11% ABV, 55 IBUs

Old Dukinfield, Barleywine

This English style barley wine was brewed to honor our family lineage back to Dukinfield, England and bloodline shared with W.C. Fields.  Rich toffee and stone fruit are at the forefront of this deep amber, boozy ale made with all Colorado ingredients from Troubadour Maltings, Root Shoot Malting, Inland Island Yeast, and Colorado Hop Co.

Blotto, Irish Red Ale

This red ale, inspired by the traditional style from Ireland, is roasty bitter and dry with a bit of milk chocolate and toffee. Malt sourced from Troubadour Maltings include Serenade Pale, crystal Encore and Chorus, Moonlight Serenade, and chocolate rye.

Route de Sel

France, Belgium

Saison

Brewed in the traditional way with a constant rise temperature mash and fermented with a yeast strain from Brasserie Dupont isolated by Inland Island Labs.  Pilsner Pevec and a touch of Munich from Troubadour Maltings and hops from Colorado Hop Company round out this complex Belgian style ale with notes of banana, bread, and white pepper.


6.9% ABV, 28 IBUs

12 oz. pour, 750 ml cork & cage

Bière de Garde

Malt forward, fizzy ale originating in northern France.  Toffee aroma with flavors of caramel and hard candy.  Pilsner, Munich, and dark roasted malts from Troubadour with white wheat malt from Root Shoot. Very light hop bitterness from Mt. Hood and Brewer's Gold.


7.7% ABV, 21 IBU's

Germany

Bavarian Helles, Lager

Brewed for over 100 years in Southern Germany, our version of this style is made with well modified pilsner malt from Troubadour Maltings in Fort Collins. Old world processes and subtle spicy/floral hops compliment the sweet malt character. German lager yeast isolated by Inland Island Yeast Lab work hard at cold temperatures to provide a clean finish. Prost!

Old Westphalian, Altbier

A deep amber ale originating in the German town of Westphalia.  Brewed with all Colorado ingredients, this ale presents balance between malt and hop bitterness.  Notes of baked bread and nuts blend with herb and spice flavor and aroma.


5.4% ABV, 34 IBUs

16 oz/ 1l pour, 32 oz crowler/64 oz growler

Märzen, Oktoberfest Lager

Deep amber, clean, rich, and malty German lager brewed with Troubadour Blue, crystal Encore, and Cara-Munich from Weyermann Malt.  Bohemian hops and a lager yeast strain isolated by Inland Island Labs add traditional German lager bitterness and aroma.


5.8% ABV, 27 IBUs

20 oz/1l pour, 32 oz crowler, 64 oz growler

Windsor Lake Weiss

Golden light and slightly tart. This kettle soured German ale is brewed in the Berliner style with undermodified pilsner malt from Troubadour Maltings and white wheat malt from Root Shoot Malting.


3.8% ABV, 3.2 IBUs

Colorado Farmhouse

Wild, Sour, Fruity

Saison du Miel

Barnyard funky, pepper, and banana round out this farmhouse ale dried out with local honey from Ft. Lupton, CO.  Rhapsody Pilsner, C-15 Chorus, and Munich malts from Troubadour along with raw winter wheat from Root Shoot add complexity with a generous dose of Southern Aroma hops.


7.5% ABV, 21 IBUs

Swink's Wild Ale

Bronze medal winner at the 2020 Big Beers, Belgians, & Barleywines Festival and gold medal winner at the 2019 Colorado State Fair.  Barnyard funk and melon from a mixed brett fermentation and cantaloupe puree.  Troubadour Rhapsody Pilsner malt and Colorado Hop Co. cascade and chinook hops.


8.2% ABV =, 33 IBUs

Peaches en Tokilya

Farmhouse ale brewed with Odyssey pilsner and white wheat from Root Shoot Malting in Loveland, CO with Simpson's Golden Naked Oats. Mango and peach puree added to primary fermentation and aged in Tokilya barrels from NoCo Distillery in Fort Collins, CO. Fruit, oak, vanilla, tequila and Zappa funk.


12 oz pour, 750 ml cork & 

Farmhouse Lime Wine

This beer wine hybrid is inspired by a recipe created by Tomme Arthur from Lost Abbey. Root Shoot Odyssey, white wheat, rye, and Simpson's Golden Naked Oats combine with sauvignon blanc grape juice, lime, and Afghani green raisins. Hopped with Nelson Sauvin brings out the white wine fruitiness.
